Progress so far: All the related PRs can be found linked to the ticket.

Note: each PR has a comment, pointing out what’s missing. Basically, catalog waits for the 1.19.1 bundle to be available in percona dockerHub registry instead of perconalab, everest-operator waits the 1.19.1 tag to be published in GH to pull the go.mod dependency, the everest PR waits for the everest-operator PR is merged to update the operator dependency.
