Since version 8.0 pt-archiver does not support user-defined character set

Description

After https://github.com/percona/percona-toolkit/commit/1d1c13fbcb8221eca9d95869ec07a75b074bcf82#diff-25b6ef8230c4774cf8a71b3351f62c7f619a62f7e50414691d0d1c3da414e643R6133-R6134 pt-archiver does not allow users to specify custom character set.

We need to check if this is intentional change, add test cases for different character sets, and return previous behavior back if needed.
